We always recommend organic produce because of the depth of flavor and the bounty of nutrition... comfort food doesn’t have to be unhealthy.
INGREDIENTS:
2 tablespoons of avocado oil
1/2 cup of chopped yellow onion
4 cloves of finely minced garlic
3 cups of vegetable stock
2 sweet potatoes peeled and diced
4 heirloom or vine-ripe tomatoes diced
4 crema potatoes peeled and diced
2 large carrots diced
1/4 teaspoon cayenne pepper
1 Teaspoon cumin
1/2 teaspoon of sea salt
1/2 teaspoon of white pepper
DIRECTIONS:
Heat the avocado oil in large, stockpot over medium heat.
Once hot, add chopped yellow onions and sauté.
Add the vegetable stock with carrots, potatoes, tomatoes, garlic.
Bring to boil for 15 minutes, stirring occasionally.
Reduce heat and simmer for 30 minutes.
Puree and strain cooked mixture.
Return strained mixture to pot and gently stir in spices.
Heat for 10 minutes on low.
Add almond milk or more vegetable stock to desire consistency and serve.
